Jonray and Peter Sanchez-Iglesias
Casamia restaurant has been established for 8 years, owned by the Sanchez-Iglesias family, Luis-Francisco, his wife Susan and their two sons Jonray and Peter. Luis (Paco) and Susan are front of house, while their sons run the kitchen. Casamia's cuisine is inspired from strong Italian roots with hints of French and Spanish infusion.
The brothers serve classic dishes with modern cooking techniques, with some original dishes also showcasing. Within the kitchen they also produce all their own bread, pastries, ice creams and petits fours. The tasting menu shows the direction of the kitchen, with some highly original ideas and concepts, creating a marathon of textures, temperatures and flavours. All of the produce used to create seasonal menus is from surrounding areas of Bristol and the south-west. Weekly deliveries from Italy allow the kitchen to use products such as Amalfi lemons and truffles.
With such good suppliers in place, and with all the family's support, Jonray and Peter have started to let their food do all the talking and 2007 saw Casamia entered into the Michelin Red Guide, then well praised in local press reviews. There followed The Times top 10 Italians in UK and then an entry into the "Which, Uk Good Food guide" with a cooking score of 5 and an Award for Best up and coming Chefs in the UK, which has made Casamia into one of Bristol's leading restaurants.
